Carob comes from an evergreen Mediterranean tree tree Ceratoma Siliqua. The fruit of the tree is a long, black sugary pod. It is naturally sweet, contains no caffeine, no theobromine and no oxalic acid. The taste of the carob is controlled by the amount of roasting it receives. The longer the roasting the stronger the taste. We use a light roast in our carob products which gives a natural sweetness to the product. |
